Viceroy Bali – our home – has a vision to bring the food it produces on site to the next level. The food grown in the organic Green House provides ingredients for Cascades.
In our continuous quest to create the perfect dining experience, we source only the freshest and highest quality produce, meats, spices, and others for each dish. The Green House produces delicious, organic vegetables and fruits and assists our team in learning and developing their own farming skills which they can bring home to their families in Bali.
The fertilizing system also plays a major role in the growth and expansion of our Green House. our team actively produce organic compost from various sources including eggshells, banana skins, coffee grounds, tea bags and rice husks which enables healthy, sustainable growth in the Green House and surrounding garden area.
Today, our dedicated gardening team are successfully growing 75 different types of edible herbs, spices, vegetables and flowers which include Vegetables: Eggplant, (Cherry) Tomato, Chili, Hot Chili, Pumpkin, Celery, Zucchini, Paprika, Carrot, Radish, Fennel, Cucumber, Green Bean, Butternut Squash, Moringa // Salads: Rucola, Lettuce, Mustard Leaf // Herbs: Rosemary, Chives, Italian Basil, Thai Basil, Parsley Curly, Parsley Italian, Tarragon, Laksa Leaf, Curry Leaf, Oregano, Dill, Kemangi, Lemon balm, Stevia, Anise Hyssop, Wild Bergamot, Aloe Vera // Spices: Ginger, Galangal, Turmeric, , Komin Leaf, Bay leaf, Kaffir Leaf, Lemongrass, Pandang Leaf, Cinnamon, Coriander, Hoja Santa, Betel Nut Leaf // Fruits: Papaya, Passionfruit, Pineapple, Water Apple, Guava, Lemon Tree, Dragon fruit, Watermelon // Flowers/Garnishing: Marigold, Oxalis, Purple Oxalis, Nasturtium, Butterfly Pea Blue and White, Dianthus.
Our goal is to encourage our guests to select their favourite vegetables and salads to enjoy during their meal at Cascades. We also plan to create a planting system for guests so they can keep an eye on their produce each time they visit.
