CasCades has now opened in Ubud! It is situated on the terrace of Bali's newest luxury villa resort, The Viceroy, off Jln. Lanyahan in the village of Nagi, on the banks of the Lembah Valley. Ubud is fast becoming the dining capital of Bali. French Executive Chef David Sosson presides over this very fine dining restaurant. David comes from a successful stint at the famous Mahsurie Restaurant in Kula Lumpur's luxury Carcosa Seri Negara Hotel. Beluga Caviar or a Veloute of Truffle and Morel with poached egg and ‘fleur de sel' are amongst the entrees. Mains include the Du Lard ou du Cochon [caramelized pork belly and loin], a Rib-Eye of Wagyu-Kobe, marinated in olive oil and anchovies or Volaille Volage [roasted duck breast with a barley risotto and licorice sauce]. Finish with the Orgasme de Chocolat [Araguani dark chocolate fondant, milk chocolate sorbet and liquorice cocoa Viennois]. Fine dining at its best!
