Duck liver is a delicacy and staple in French fine dining.
At CasCades Restaurant, our foie gras is presented in three different ways but we highly recommend the seared version by our chef.
He pan fries the duck liver so that the exterior is slightly crisp yet yields easily when you bite in, to reveal a tender and juicy interior. An Asian twist is added with accompanying Balinese fruits and a reduction of red wine and grape. Complete this course with a glass of wine from our extensive range of wines.
