Flowing on the Valley
CasCades restaurant opened late last year, nestled on the terrace of Bali 's newest luxury villa resort, The Viceroy Bali, in Ubud. The restaurant is situated high on the Lembah Valley which is veined by River Petanu.
Ubud is fast becoming the dining capital of Bali. French Executive Chef David Sosson presides over this fine restaurant. David comes from a succesful stint at the famous Mahsuie Restaurant in Kuala Lumpur 's luxury Carcosa Seri Negara Hotel.
Beluga Caviar or a Veloute of Truffle and Morel with poached egg and "fleur de sel" are amongst the entrees. Mains include the Du Lard ou du Cochon (caramelized pork belly and loin), a Rib-Eye of Wagyu-Kobe, marinated in olive oil and anchovies or Volaille Volage(roasted duck breast with a barley risotto and licorice sauce). Finish with the unique assortment of Orgasme de Chocolat (Araguani dark chocolat fondant, milk chocolat sorbet and liquorice cocoa Viennois).
Renowned French Chef David Sosson has created a menu which is generating much talk and excitement among gourmands world-wide. He brings an inspired creativity to classic French cuissine, and the promise of culinary memories which last.
