Executive chef Nic Vanderbeeken joined the Viceroy team in 2013, designing a spectacularly elegant menu for CasCades Restaurant. Nic brings 20 years experience to the kitchen having worked in Belgium, France, the U.S and Vietnam.

Nic seamlessly combines traditional European cuisine with unique Asian flavours to delicately construct his dishes. Through continuing his collaboration with celebrated international chefs for events at CasCades, Nic adopts modern European gastronomic techniques.
